Apple Smoked Pork Burgers with Cabbage-Apple Slaw

Shake up your barbecue with this tasty alternative to the ubiquitous beef burger.

Ingredients

Serves 8

  • 45g Hunter & Smoakes Fruity Apple Original Smokies

  • 1Kg pork mince

  • 140g panko breadcrumbs

  • 1 medium onion (diced)

  • 2 celery stalks

  • 2 egg whites

  • 3 tbsp. olive oil

  • Sea salt

  • Freshly ground black pepper

  • 1 tbsp. brown sugar

  • 250ml cider vinegar

  • 350g red cabbage (shredded)

  • 2 red apples (peeled, cored and diced)

  • 8 buns


Method

  1. In a large bowl, combine pork, breadcrumbs, two-thirds of the onion, celery, egg whites, and 2 tablespoons of olive oil. Season with 2 teaspoons each of salt and pepper. Shape into 8 equal patties. Place patties between squares of baking paper and refrigerate until chilled (at least 1 hour).

  2. In a large bowl, make your slaw by tossing to combine cabbage, apples, brown sugar, cider vinegar, and remaining onion and olive oil. Set aside.

  3. Prepare your barbecue and bring your Original Smokies to a smoke as per pack instructions. Grill buns, split side down, until warmed, about 2 minutes. Transfer to a platter. Grill burgers with the barbecue lid closed, about 8 minutes per side – ensure meat is fully cooked through.

  4. Place cooked burgers on bottom buns then layer with slaw and top buns.
