Perfect Smoked Chicken Wings

Ingredients

Serves 4

  • 45g Hunter & Smoakes Original Smokies (we recommend Rich Hickory, Black Cherry or Hunter’s Choice Blend)

  • 1kg chicken wings

  • Sea salt and ground black pepper to taste

  • 250ml barbecue sauce


Method

  1. Prepare your barbecue. If you’re using a charcoal barbecue, shuffle your coals over to one side to create an area of indirect heat. When the coals have a dusting of grey ash and the temperature is such that you can hold your hand just above the coals for 5 to 7 seconds, you are ready to cook. For a gas barbecue, turn one of the burners down off, lower the cover and heat for 15 minutes.

  2. Bring your Original Smokies to a smoke as per pack instructions.

  3. Generously sprinkle your chicken wings with salt and pepper, then place them on the unheated side of the grill. Cover your barbecue and allow the chicken to infuse with smoke for around 15 to 20 minutes.

  4. Lift the barbecue cover. At this point, you can move the chicken so that it grills directly over the dying charcoal or cook the chicken over a low flame on a gas grill until the chicken is crisp and cooked through - around 10 to 15 minutes. Baste the chicken occasionally with barbecue sauce and turn it often. Remove the chicken to a warmed plate and serve. Perfection!
