Hunter's Smoked Vegetable Skewers

Give your barbecued veggies a boost with our mouthwatering wood smoke seasoning.

Ingredients

Serves 4-6

  • 45g Hunter & Smoakes Hunter’s Choice Blend Original Smokies

  • Small punnet of cherry tomatoes

  • 1 small courgette

  • 1 yellow pepper

  • 1 red onion

  • 6 small radishes

For the marinade

  • Handful of fresh coriander leaves, diced

  • Juice of 1 lemon

  • 1 tsp maple syrup

  • 1 tsp fresh, grated ginger

  • 2 cloves of garlic, diced

  • 200ml water

  • Salt and black pepper to taste


Method

  1. Prepare your vegetables. Halve tomatoes, halve radishes, then slice courgettes, pepper and onion into 2 cm/1 inch pieces. Place vegetables in a large bowl.

  2. Place marinade ingredients into a small food processor or use a hand blender and blend until smooth. Pour marinade over vegetables and toss to coat. Marinade for at least 20 minutes, but the longer the better.

  3. Skewer vegetables on 4-6 skewers. Reserve the remaining marinade in the bowl.

  4. Prepare your barbecue, bring to a medium-high heat and bring your Original Smokies to a smoke as per pack instructions. Cook skewers on the barbecue with the cover down for approximately 5 minutes, then turn them over and brush with the extra marinade. Grill for another 3-5 minutes with the cover down, until the vegetables are tender and have grill marks. Serve immediately.
