Brie, Fig and Apple Smoked Sandwich

A fancy grilled cheese sandwich perfect for autumn grilling outdoors. Best enjoyed with a bowl of hot soup.

Ingredients

Serves 2

  • 45g Hunter & Smoakes Fruity Apple Original Smokies

  • 1 tablespoon olive oil

  • 1/4 red onion, sliced

  • 4 slices sourdough bread

  • 2 tbsp soft butter

  • 4 tbsp fig butter or jam

  • 5 ounces brie, thinly sliced

  • 1 large Granny Smith apple, peeled and thinly sliced

  • handful of rocket leaves


Method

  1. Prepare your barbecue, bring to a medium-high heat and bring your Original Smokies to a smoke as per pack instructions. Heat the olive oil in a small skillet. Add the onion slices and cook with the barbecue lid down until caramelised, stirring occasionally. Set aside.

  2. Butter the outside of each slice of bread. Spread fig butter or jam on the inside of each slice of bread. Layer the brie, apple slices, caramelised onions, and rocket. Top with the other slice of bread.

  3. Place the sandwiches directly onto the barbecue. Cook for 2-3 minutes on each side with the barbecue lid down, or until the bread is browned and the cheese has melted. Serve immediately.
